#Xtra Crispy Peanut Butter Cookies

#Peanut Butter Cookies! #It’s Back to school! Nothing will conquer the homework blues like a lunch box of after school treats. These versatile, simple to make Xtra Crispy Peanut Butter Cookies are the perfect jewel to pack a little crunch.

September is here. And while the change from slower paced days of lounging while you sipped lemonade (did those really exist?) to the hustle and bustle of busy mornings and brown paper lunch bags may be jarring, it’s also exciting. It’s a chance to change with the seasons; fill your home with fragrances of Fall and seasonal treats! This little jewel is the perfect make ahead, time-saving, simple cookie recipe to do just that.

Xtra Crispy Peanut Butter Cookies are super-thin refrigerator cookie classics formed in a roll, then sliced thin–for that extra crunch.  They’re also simple to make and versatile. Once the dough is made, it can either be baked or frozen for later. For the best of both worlds, make two batches–bake one right away while freezing the other for later. Easily stored, these cookies are a perfect pick-me-up for a packed lunch or an after school treat.

What makes these cookies truly special are their buttery crunch–and brown sugar is the secret. The peanut butter is subtle enough that the brown sugar along with the butter caramelize in a way that packs that punch of a crunch while still having a melt in your mouth quality.
