Positively Powerful Salad

I feel like we all could use a dose of positive power about now, so here is a salad packed with positivity and nutritional power and running on jet fuel, another little jewel from the Bijouxs cookbox, a Positively Powerful Salad.

Cooking over the long haul provides a window into what I term the “fashion of food”, the trends that follow and sometimes lead the food mood in any give era. Spa cooking became full-fledged when top spas began publishing their cookbooks – beautiful food, in beautiful settings. There are many little gems within these cookbooks and the Positive Power salad from the Canyon Ranch Spa is a little jewel.

Healthy cooking and special diets were the mainstay of my work as a personal chef, cooking to a variety of dietery needs, so of course a collection of recipes ensued.  The Positively Powerful salad is slightly adapted from the Canyon Ranch original to create a vegetarian version.  This is a raw veggie salad that adapts well with substitutions, perhaps what is on hand in the kitchen at the time, and sports a super-light Jet Fuel dressing, also an adaptive recipe.

The collective group of raw veggies is counterpoint to the sweetness of crisp jicama, apple, and raisins, with added crunch from almonds (in this case on hand hazelnuts) and sunflower seeds. Being that this is an all raw salad, start with small servings, unless you are accustomed to eating lots of fiber.  The light Jet Fuel dressing, slightly modifed with the use of Bragg Liquid Aminos instead of Worchestershire sauce, is nice when first tossed with the vegetables, left to chill for a short time, then finishing the salad with sprouts, nuts and raisins right before serving.

    1. Hey Lentil! This salad is so light it runs on jet fuel – the dressing is very light – it’s a super healthy little jewel. You could of course swap out some of the water with oil, although it may cut down on your airspeed:)
