Asian Turkey Soup

Asian Turkey Soup–it’s a mashup, a bowl of comfort with warming flavors snatched from all the bowls of soup I love. Quick and light–a before and after Thanksgiving bowl, so take a load off from the holiday rush with a little comfort from Bijouxs.

This soup is mashup of a recipe, combining a collection of flavor themes from different soup recipes: meatballs reminiscent of Italian wedding soup; a fragrant garlic and ginger broth from Thai Tom Yum; and the addition of fresh herbs such as basil and cilantro via Vietnamese Pho. Yes, a little mashup, but it creates a simple, refreshing and reviving bowl.

The ingredients are simple, easy to procure, nothing special is required. One ingredient I like to use as part of this feel-good bowl, includes Bragg Liquid Aminos, a soy sauce alternative. Unlike soy sauce, Bragg Liquid Aminos has no added table salt or preservatives. It’s derived from soybeans and purified water and contains 16 essential and non-essential amino acids. Besides its health benefits, liquid aminos is also simply a tasty addition to salads, meats, rice and of course, soup. It can be found at most major grocery stores too, yay!

Assembling the soup is easy. Fresh garlic and ginger are added to chicken or turkey broth, brought to a simmer, then the tiny meatballs (simply made by rolling pinches of lean ground turkey or shredded turkey leftover from your Thanksgiving bird) are added to gently poach in the broth. Within 15 minutes, you are ready to serve. Fill bowls with the steaming hot soup, top with fresh bean sprouts, scallions, herbs such as cilantro and basil, and for added feel-good benefits, I like to include a teaspoon of spicy garlic chili paste–more garlic!

This turkey soup is a perfect way to take a load off from the holiday rush and relax–even if it’s just for a spoonful, or two. It’s a simple, serve yourself style that will warm and nourish your soul and yes, your stomach.

P.S. A friend just reminded me of something I forgot to mention, you can make the soup using vegetable broth & cubed firm tofu for an all veggie soup. Also very yummy!

      This recipe is super easy Darlene! I freeze the broth (with the meatballs), then just heat up and add fresh herbs you have on hand. Add in cooked noodles or rice if you like. Enjoy!
