Life…and eating in the fast lane, no time to pull over, it happens – so, what to prepare for dinner?

Perhaps this irresistible combination of crispy flatbread topped with creamy ricotta (maybe via last week’s recipe?), rich prosciutto with crispy spring snap peas and herbs – a quick fix for a racing hunger.

It won’t take long – just put on the blinker and pull over for a quick stop at the market. Spring-sweet snap peas and herbs are simply dressed with olive oil and lemon, then made meal-worthy with prosciutto plus ricotta from the local deli, all anchored on a crispy base of lavash flatbread.

Lavash flatbread is a staple in Mediterranean cuisine – a thin, soft unleavened bread, traditionally sold in large sheets. Trader Joe’s sells lavash in 9×12 inch sheets. Also, check in health markets for lavash-style options that are gluten free. Lavash flatbread is a Bijouxs pantry staple in the freezer, the flexibility abounds.
