Italian Rice & Peas

Cooking with economy & grace, plus dinner in 15 minutes – Italian Rice and Peas, what are you waiting for?  Let’s get started on this swift little jewel.

15 minute meals – yes, it’s possible, and truthfully many nights in the Bijouxs kitchen are spent enjoying simple 15 minute little jewels from the recipe collection. Cooking with economy and grace is much more than just time or expense. When you cook at home you can select fresh, healthy ingredients to create a meal, often in less time than it takes to heat a frozen dinner, and avoid the expense and hazards of eating out. Time is precious – so, it’s time to share.

Where better than Italy, with its simply fresh cuisine, to inspire a 15 minute jewel. Italian Rice & Peas is a quick version of the beloved classic Risi e Bisi, featured Bijouxs No. 44. When I don’t have time or an abundance of fresh English peas, I make this simple, edited version.

Italian arborio rice is noted for its creamy texture when cooked and creates a meal of great comfort and economy. The key to cooking Italian arborio rice is quite simple. A technique of adding measured amounts of hot broth, cooking and stirring until the broth is absorbed, then continuing to add measured amounts of broth until the rice is cooked al dente, produces a creamy bowl of rice, right on cue.

Frozen peas are perfect for this dish, and along with a few other pantry basics, such as onion, broth, butter, and Parmesan cheese – the meal is made. Fresh basil and pine nuts ramp up the flavor. Complement the richness of Italian Rice and Peas with fresh additions such as a crisp salad and fresh fruit for dessert.
