Zucchini Gazpacho

Zucchini Gazpacho | Bijouxs Little Jewels

Gramercy days – Big city, bright lights and cool bowl of soup from a famed NYC tavern – this is a little jewel.

Gramercy Park was point center of my stays in NYC in my design days. Centrally located near our Union Square design loft, the Gramercy Park neighborhood afforded me a hotel (famed Gramercy Park Hotel), eateries, and views of Manhattan’s only private park. The hotel boasts an illustrious past and then still hip, but much in need of repair at the time I  stayed. However, in the dining room I remember being served the best pot of very strong coffee and extra-crispy brown toast and jam, the way to my early morning heart.

Work days were busy, but included visits to the Greenmarket and The Union Square Cafe, which opened prior to the Gramercy Tavern. I returned to NYC years later and walked the Gramercy area, to the hotel and the then new Gramcery Park Tavern, a truly wonderful restaurant in all ways. The Gramercy Tavern Cookbook is a beautiful book, one to add to your collection, with history, teaching and flat-out beautifully delicious food.

Zucchini Gazpacho is my ode to this lovely restaurant, slightly adapted via their Chilled Zucchini Soup. Summer’s bounty is featured. Zucchini provides the construct of the soup’s base instead of the traditional tomato, with basil, parsley and spinach providing the intense green overture. Heirloom cherry tomatoes and cucumber garnish bowls of this intensely refreshing green soup.

My new life feels somewhat familiar – once again talking properties, finishes and square footages, yet in a new locale with a relaxed vibe. Today the soup is served on my rustic wooden table, simply garnished – a taste of Gramercy Park, forever a little jewel.

As always, enjoy. B

  1. Wow, this is my kinda recipe! I’d rather eat this than drink a green juice any day! It was fun hearing about your NYC days and glad you’re enjoying your new digs.

    1. Hello Lentil! Oh, I agree with you…this soup is so fresh tasting and also makes work of any bumper crop of zucchini from the garden. NYC was fun – a very special time to work in that wonderful city. Always love to share a little jewel from my travels. Great to hear from you and send my best all the LA foodies!

  2. I too love that place and have similar memories. This soup however escaped me and I plan to change that fact soon. GREG
