A galette is a rustic tart with hand-folded edges, that’s all, it’s just that easy. Pink Lady Apple & Dark Cherry Galette, a tart is born – a little jewel from Bijouxs.
Celebrations abound in Spring. Perhaps you are attending or celebrating at home and would enjoy a simple sweet for the festivities, here’s Bijouxs’ contribution. Sliced apples and sweet cherries are folded in a simple dough (either from-scratch or the freezer) and baked until crisp and golden.
Pink Lady apples have been arriving in my organic produce boxes. Inspired by a dish on the Chez Panisse menu, I thought the apples lovely pink color and extranvagent sweetness would lend itself to a dessert. With only a few apples, I added dark sweet cherries (yes, frozen, defrosted & drained) to the galette. Beautiful, sometimes it all works.
I sliced the apples thin, easily by using a handheld mandoline slicer (like this) then fanned them around the dough which was rolled out to a 12-inch circle. The cherries were mounded in the center of the tart, edges folded over, a sprinkle of sugar and off in the oven. A brush of rapsberry perserves on the apples for another layer of pink sweetness.
