Staying on the Bijouxs simple path, a crisp could not be easier and rhubarb just screams Spring. The classic combination that my Grandmother turned into treasured pie, now a simple bake with a tropical twist of coconut, so good.

It’s nice to have a quick little bake for dessert, something sweet but simple and a fruit crisp always works. I added the coconut twist, which is recalled in a few of the staple ingredients, along with the coconut in the topping.
If you have not cooked with rhubarb, it’s tart nature is balanced by the strawberry’s sweetnness making, the two a great pair. I always grab a few stalks this time of year, the season is short. This recipe makes two individual crisps, but can be expanded for a larger group – simple and flexible.
