If you are looking for a simple & easy, incredibly tender-delicious cake, that can be made ahead and goes together easily mixed by hand, may I introduce you to Citrus Olive Oil Cake – a true little jewel.
MAIALINO OLIVE OIL CAKE
This recipe originates from the famed Maialino Restaurant in NYC, a trattoria overlooking Grammercy Park. My memory links to Gramercy Park, the place I stayed when commuting to work in New York and that the Maialino establishment, with four spaces (dining, wine counter and private dining room) were designed by the famed Rockwell Group, a very dear friend was project manager–six degrees of separation.

Leave it to the Italians to create a fabulous but simple cake, using basic pantry ingredients. Italian olive oil cake is dense, and keeps for days (if you can resist). There are many versions of this cake around, but when I saw the pedigree of this recipe, I knew I had to try it.
CITRUS OLIVE OIL CAKE
As you well know from reading Bijouxs, I love to adapt recipes, bringing in my own ideas; that’s what cooks do. For my Citrus Olive Cake I made a few changes to brighten the citrus flavor. First, I used a wonderful Blood Orange Olive Oil from Queen Creek Olive Oil Mill. I sampled it at the mill and brought some home. Good news, you can order online, or use any citrus-infused olive oil you like, or a great extra-virgin olive works too. Second, I chose Clementines as the second citrus flavor note. A clementine is a hybrid between a mandarin orange and a sweet orange, originating in 1902. Clementines are small, seedless and very popular in the US. I think it is a great flavor pairing, I was happy enough with the results enough to share the recipe with you.
Italian olive oil cake goes together in a flash. Really, just two bowls, no mixer required for the batter – just hand mix and bake, what could be simpler? If you are not sure about olive oil vs butter for a cake, this recipe will make you a convert. The cake takes nothing to adorn but a dusting of powdered sugar and for good measure some Mascarpone Whipped Cream, which holds beautifully, just like the cake.
