If you are craving a crispy crust tomato-rich pizza, this flatbread recipe is the for you. Begin with simple lavash flatbread from the market. Trader Joes & Whole Foods or local markets usually have a selection to choose from. Any thin flatbread you can find should work–the key is that they are very thin. The French classic combination of tomatoes, both fresh and a rich sauce, combine with Provençal herbs to top this crispy “pizza”. Slices of fresh mozzarella create a creamy smooth counterpoint to the rich tomato base.

SLOW-COOKED TOMATO SAUCE

This sauce is from The River Cafe in London, a legendary restaurant for over 30 years. The chefs Ruth Rogers and Rose Gray created one of the most creative restaurants in London. The method for this sauce is so simple. Canned tomatoes, red onion, garlic and olive oil are slow, very slowly cooked to create this simply amazing sauce. It is worth taking the time to create this sauce. I stumbled on the recipe, and almost made it by accident by leaving my sauce on low and walking away-what emerged was a deeply rich sauce. Keep this sauce around, you will use it for everything. The recipe is tucked away in the back corner of the cookbook, humble placement for such a famous recipe.

THE RIVER CAFE

I became aware of the River Cafe on one my first trips to London. It had just opened and was already creating a great buzz. This video, which showcases a Christmas Dinner at the restaurant, contains fabulous cooking jewels from the chefs and features young Jamie Oliver as he began his work at the restaurant.
