Hurry Curry Laksa | Bijouxs Little Jewels

Welcome the vibrant Autumn hues…golden yellow, burnt orange, and rich reds, reflected in a spiced bowl of Hurry Curry Laksa, a seasonal jewel from the Bijouxs Kitchen.

The first signs of Autumn in the desert have arrived, the cooler nights prompt a warm bowl of soup from the kitchen. A simple 15-minute version of my favorite Laksa, curry noodle soup, is a colorful bowl to welcome the season.

Laksa is a spicy noodle dish that is popular in Malaysia. For over a decade, I savored an amazing bowl of Laksa served in a small, family restaurant in Pasadena. The elements included a vibrant orange coconut milk broth with pools of red chili oil, shrimp, cubes of fried tofu with rice noodles, all immersed in the spicy, salty sweet broth. Just perfect. Sadly when the restaurant shuttered I was left on my own to try to recreate a bowl of Laksa.

In my search, I found a Laksa recipe that is somewhat close, and now have edited that to create a quick version – which has become my Hurry Curry Laksa. In this shortened version, I opted for standard grocery stores ingredients, to serve as the base recipe. Additions such as fresh lemon grass, hot chili oil, and cubes of fried tofu all are welcome, Laksa is a flexible bowl.

I vary the combinations of add-ins to the broth, sometimes with chicken (as shown) or other times opting for shrimp with bean sprouts and some veggies, via Instagram. It is delightful and simple bowl that warms the soul. Especially now with my busy days as a Realtor, coming home to a warm bowl of soup is a true little jewel.

  1. This sounds wonderful. Should shrimp be pre-cooked before adding? Or will they cook in the broth with the noodles in 5 minutes off heat?

    1. Hello! I have used both cooked and uncooked shrimp, adding in with the noodles. The uncooked shrimp will generally cook in about 5 minutes, depending on size. Thank you for being a part of Bijouxs. Enjoy!
