A treasured cookie recipe from a friend and fond memories–Jerry’s Persimmon Cookies a Little Jewel from Bijouxs.

PERSIMMONS IN THE GARDEN

The years have flown past, these times are unlike any other. We find ways to dig deeper into ourselves, memories and plans we made come back to mind. This wonderful cookie recipe was shared with me by a friend, who at the time had a thriving persimmon tree as did I.  I was living in a magical Blue House, where there was a secret garden that contained a glass orchid house and a giant persimmon tree. It was there and then that I learned to make Persimmon Pudding and these cookies shared by a new friend.

Funny, history tends to repeat, once again I find myself the beneficiary of a bountiful crop of persimmons from a new friend. This season I have been gifted persimmons of both varieties, Hachiya and Fuyu, and opted for cookies, easy to share with friends. Now living along the Central Coast this has opened up a bounty of fresh fruits and vegetables.

PERSIMMON COOKIES

Persimmons to me are strange fruits, not edible raw but make a wonderful base for puddings and cakes. The fruits ripen perfectly for the fall holidays. Making these cookies takes me back to days when Jerry was with us, sadly passing years ago. Never forgotten, his cookies have been made in my kitchen for many years. The new addition is adding slice of dried Fuyu persimmon atop each cookie. This idea I discovered from a local chef and gardener. This was the first time to dry persimmons, turns out it really is quite simple.

The cookies themselves are very easy to prepare. The trick is to have a cup of Hachiya persimmon pulp ready to add to the batter. My pudding recipe tells how to extract the pulp from these strange fruits. Once you have a cup of the pulp you are ready to start baking. Simple basic ingredients such as flour, sugar, spices, butter and additions such as raisins and walnuts make these a cookie with character. The cookies are flavored much the same as the pudding with warming spices that bring out the almost cinnamon-like flavor of the persimmons.
