Bijouxs Bits: Provencal Tomato Cocktail

Makes 1 pitcher

Place 3 lemons, sliced and 1 large bunch of mint in a large glass pitcher and gently muddle together using a wooden spoon to release the flavors from the lemons and the mint. Pour one large bottle of good plain tomato juice (try to avoid ones with salt and other ingredients) and refrigerate for about 3 hours allowing the flavors to develop.

To serve, garnish glasses with a slice of lemon and a sprig of mint. This tomato cocktail may also be spiked with a little or gin or vodka and served as an apéritif during cocktail hour.
