Bijouxs Bits: Quick Thai Cucumber Pickle

Serves 4

2 large cucumbers, peeled and thinly sliced
Thai fish sauce, to taste
2-3 fresh limes
Salt and freshly ground black pepper
1-2 teaspoons fresh ginger, peeled and chopped
1 green onion, both white and green, thinly sliced
1-2 teaspoons jarred jalapeno pepper, minced
dash brown sugar, if needed
fresh mint leaves
fresh basil leaves
fresh cilantro leaves

Place the sliced cucumbers in a medium bowl and sprinkle with about 1-2 teaspoons of the Thai fish sauce, the juice of 2 limes and season with salt and pepper. Toss and set aside.

Prepare the ginger, green onion, and jalapeno and then add to the cucumbers, tossing well to combine. Taste and adjust the seasonings adding a bit of brown sugar, lime juice, and ice water as needed. Cover and refrigerate for about 15 minutes. Just before serving garnish with a few leaves of fresh herbs such fresh basil, mint and cilantro.
