15 Minute Pizza Dough

1 3/4 cups flour+ more for board
1 teaspoon salt
1 envelope fast rising yeast
3/4 cup hot water

Place flour and salt in food processor, process 10 seconds. Dissolve yeast briefly in very warm tap water (not boiling) and with machine running, add water until dough comes together. Add more flour or water if needed for a smooth dough.

Remove dough, shape into a ball, let rest for 10 minutes. Cut dough in half, roll out on floured board to yield two thin 11 inch pizzas. Brush dough with olive oil, then add your favorite toppings.

Bake on a pizza stone preheated in 500 degree oven for about 10 minutes or at 450 degrees in metal pizza pan for 15-25, or until the crust is crisp and toppings are brown and bubbling.

COOK'S NOTES: If you are using a metal pizza pan be sure to coat pan with olive oil to promote a crisp crust. The dough can be made the night before, placed in a plastic bag in the refirgerator until use.
