Monkfish in Parchment Paper

Serves 1

6 ounces monkfish fillet
1 1/3 tablespoons soy sauce
1 1/3 tablespoons green onion, whole minced
1/2 lemon, juiced
1/2 teaspoon chives, minced
1/2 teaspoon fresh parsley, chopped
1 tablespoon dry white wine
cooking oil spray

Preheat oven to 400°.

Lay flat 1 large sheet of parchment paper, large enough to create a small package around the fish. Place the monkfish filet on the sheet of parchment paper. Sprinkle with soy sauce, green onions, lemon juice, chives, parsley and wine. Fold the parchment over the fish and bring the edges of parchment together and roll to seal well on all sides. Place the parchment packet on a baking sheet.

Bake for 20 minutes. To serve, unroll parchment packets and place fish on a plate. Spoon cooking liquid and herbs over top.
