Whiskey-Flavored Pork Chops

Serves 6

1 cup sour cream
3/4 cup water
3 tablespoons flour
3/4 teaspoon salt
3/4 teaspoon dried sage
3/8 teaspoon black pepper
6 6 ounce pork center loin chops
salt
freshly ground pepper
1 1/2 tablespoons olive oil
3/4 cup onion, chopped
1 1/2 cups crimini mushrooms, sliced
3/4 cup whiskey

Preheat oven to 300°. Combine the first 6 ingredients in a small bowl.

Sprinkle the pork chops with salt and pepper. Heat the olive oil in a large oven-proof skillet over medium-high heat (cast-iron is ideal). Add the pork chops, sauté 5 minutes on each side, or until golden brown.

Remove the pork chops from the skillet. Add the chopped onion and mushrooms to skillet and sauté for 3 minutes. Carefully add whiskey to pan; cook for 1 minute or until liquid almost evaporates. Stir sour cream mixture into the skillet. Return the pork chops to the skillet, spooning the sauce over chops.

Cover and bake at 300° for 1 hour. (If you do not have an oven-proof lid for the skillet, cover tightly with heavy duty foil.)
