Blackberries in Liqueur

1 quart blackberries, washed and drained
1 cup vodka
1 cup cognac
2 tablespoons superfine sugar

Place the blackberries in a large glass jar with a tight fitting lid. A glass canning jar such as Mason or Weck canning jar works great.

Combine the vodka, cognac, and sugar together, stirring to dissolve sugar. Add liqueur mixture to blackberries and seal the jar. Store in the refrigerator for 1 -2 days, turning occasionally, prior to serving.

The blackberries are delicious served with ice cream or pound cake.

Also, use the blackberries to create a simple summer cocktail by placing a few berries in a glass with some of the liqueur, crush the berries lightly, then add sparking mineral water and garnish with a twist of lemon and a few of the whole berries. VoilĂ  - savoring the little jewels of summer.
