Russian Tea Cakes

Makes 3-4 dozen cookies

1 cup soft butter
1/2 cup sifted confectioners sugar
1 teaspoon vanilla extract
2 1/4 cups all-purpose flour
1/4 teaspoon salt
3/4 cup black walnuts, chopped
Extra confectioners sugar for rolling

In the bowl of a stand mixer or by hand. Cream the butter, sugar and vanilla together. Slowly add flour and salt, until dough forms. Fold in the walnut pieces.

Flatten dough in rectangle and chill for about an hour until firm. Roll in 3/4 inch balls and bake on ungreased cookie sheet at 300 degrees for 20-25 minutes. (If they dent in the center they are not done)

Roll cookies twice in powdered sugar while cookies are still hot.

COOK’S NOTES: This is my Grandmother’s orginal recipe, and I very sure we always made the dough by hand. Black walnuts can be found in the produce section of markets near the holidays, regular walnuts or pecans are also nice. Keep cookies small, almost one bite due to their buttery, crumbly texture.
