Sheet Pan Buttermilk Brownies

Makes 13x17.8 inch pan

1 cup water
1 stick butter
1/2 vegetable oil, such as safflower or canola
2 cups sugar
2 cups flour
4 tablespoons cocoa powder, unsweetened
1 teaspoon espresso powder
1/2 cup buttermilk
1 teaspoon baking soda
2 eggs

Preheat over to 400 degrees.
Bring water, butter and vegetable oil in a medium saucepan, bring to a boil.

Place sugar, flour and cocoa in a large mixing bowl. Pour butter and oil mixture over sugar mixture.
Add buttermilk, baking soda and eggs, mix well.

Pour into a lightly buttered 1/2 sheet pan (13x17.8inches) anad bake for 18 to 20 minutes, until cake is firm to touch.

Frosting:
1 stick butter
1/4 cup cocoa powder
1/3 cup buttermilk
1 pound confectioner’s sugar
1/2 teaspoon vanilla bean paste

Bring butter, cocoa, and buttermilk to a boil. Add confectioner’s sugar and vanilla. Whisk until smooth.
Frost brownies while warm.
