Cookies, always a good idea. Do we really need another chocolate chip cookie recipe? Yes. These Salted Dark Chocolate Almond & Olive Oil Cookies check a-lot of the boxes that make a cookie fabulous.

SALTED DARK CHOCOLATE ALMOND & OLIVE OIL COOKIES

Starting from the beginning, Toll House Cookies are the classic, and after that there are hundreds of iterations of this classic cookie. I have a number of chocolate chip cookies of my website, however once in a while a change of the ingredients yields a newer version of the classic.

To begin, I started with a classic cookie base recipe, then I started to play. First, dark chocolate with almonds was the ‘chip’ choice, cut into rough, uneven chunks off of a large 1 pound bar. The combination of dark brown and white sugar balances the sweetness. This is where things vary. I used olive oil instead of the traditional butter, creating a softer cookie with a somewhat savory nuance. Lastly I did my favorite move to sprinkle Maldon Sea Salt on top before baking.

The cookies get their crinkled texture by baking, then removing the sheet pan every few minutes and banging it on the counter under cookies are done. This cookie was made famous by Sarah at Vanilla Bean Blog, thank you.

    Its 7am and I should be packing to go out of town. Instead I am reading your recipe and drooling! I cant wait to bake these.
