Tomato Soup with Chili, Ginger & Coconut

Bijouxs is keeping it simple this month with a version of classic tomato soup. Winter’s blustery days are softened by a bowl of tomato soup – the classic comfort soup is warmed with gentle spices, so light a fire in fireplace and curl up for a simple cozy soup meal.

What is a more classic pair for a winter day than a bowl of tomato soup and a grilled cheese sandwich? This take on a simple classic soup adds gentle warming spices of mild chili and fresh ginger served with a shot of creamy coconut milk. This tomato soup is inspired by an old recipe from the Bijouxs archive for a stewed tomato sauce served over rice, but its warming gathering of spices seemed a natural fit for a simple winter tomato soup.

On-hand pantry ingredients with a few market fresh additions cook up quickly and in about 15 minutes, soups on. To round out this simple soup meal, add a grilled cheese sandwich of your choice or a scoop of steamed rice and a frisée salad tossed with fresh pear and walnuts.

Soup meals keep it simple and remind us of the everyday beauty all around us, right here in our kitchens, the simple little Bijouxs.
