Where the wild things are–at the local farmer’s market. Wild Spinach & Roasted Mushrooms is a simple side dish, with just a touch of the wild and everyday beauty in our kitchens from Bijouxs.

Behold the everyday beauty in our kitchens. Capturing these beautiful moments in my kitchen has been the mantra for Bijouxs Little Jewels from the Kitchen, since its launch back in 2010. My recipe collection spans 30 years and those I bring you are perfect for the home cook. Some recipes are super-simple, some requiring perhaps a bit more time, but no recipe you cannot master. I refer to Bijouxs as “a little black dress.” A food website you can count on; easy to use; providing an emphasis on recipes and products with enduring qualities; functional, recipes you can dress up or dress down; and I love to hear from readers who have their own take, you are creating your own Bijouxs: The Little Jewels from the Kitchen that fit you well.

Behold the beauty of the farmers markets. Canvasing the stalls of fresh produce and fruit, it’s one of my favorite pastimes. I continue to learn so much about food speaking with the growers. One of my favorite vendors at the local market, sells a fabulous selection of mushrooms, all kinds of greens and fresh herbs. I can’t leave without a bag of their mushroom mix, then spotting the lamb’s quarters, a perfect pairing came to mind.

Wild spinach (lamb’s quarters) is seasonal in Los Angeles at the markets, showing up late spring. Availability depends of the market you attend. Wild spinach is well–yes, wild. Less refined than common spinach, a ‘little rough around the edges’ it has extremely green triangular leaves and an earthy flavor.

My recipe features a collection of different mushrooms roasted in the oven with olive oil and plenty of garlic. The spinach is quickly sautéed and tossed with the mushrooms. Delicious and simple.

The meatiness of the mushrooms makes this a perfect candidate for a one-bowl meal on top of rice or quinoa and perhaps more fresh herbs. Tucking in to a simple, delicious meal from home at the end of the day is just the best.
