Beans are a lovely staple, off times forgotten, that provide the base for simple, earthy recipes. Italian White Beans are a Bijouxs Basics, which through the decades has transformed into a very flexible, simple to prepare and also very cost efficient recipe. Over the years since I first posted the recipe I have played around with the recipe, but I keep coming back to the original, shared years ago by a friend while we were on vacation in the beautiful Northwest.

ITALIAN WHITE BEANS

Basic Italian White Beans are simple – let the oven do the work and with time a creamy pot of beans emerges, ready a variety of kitchen assignments. Here, Italian White Beans make a great one-bowl meal with thick slices of country bread toasted, soaking up plenty of the garlicky broth. The beans can also be served as a side dish, served at room temperature, alongside simple grilled meats, such chicken or your favorite sausage.

SIMPLE RECIPE

Flexibility is word for this recipe. Italian White Beans are a flexible Bijouxs Basics recipe. As a soup, puree and add more chicken or vegetable broth to desired consistency. For a sandwich spread or dip, drain off a small portion of the liquid and puree the beans. Spread on brown bread with arugula and roasted red peppers or as a dip with a dash of spicy Sriracha sauce. For a salad, toss the drained beans with vinegar and oil and add chopped fresh red pepper, cucumber and green onion. Go ahead, make these beans your own.
