Baked Cinnamon & Sugar French Toast

Cinnamon, sugar and toast the classic trio of breakfast favorites unite in simple Baked Cinnamon & Sugar French Toast. A perfect start to a little jewel day.

CINNAMON & SUGAR

This delicious flavor duo never fails to please. Here the spices are foremost in a simple prep-ahead take on French Toast. All the fussing happens the night before and in the morning just pop the pan of toast into the oven and savor the morning. Along with the cinnamon & sugar I have included a few of my newer favorite spices such as cardamom, ginger and allspice. They complement each other and add a depth to the dish.

BAKED FRENCH TOAST

With a lots of slightly stale wheat bread french toast came to mind…but even simpler, a loaf of french toast ready to slice then serve and all prepped the night before. This recipe is a combo of bread pudding and classic breakfast casserole. Baking in a loaf pan creates, well yes a loaf of french toast, ease in serving for guests at the breakfast table. Of course, the classic cinnamon-sugar crumble topping adds that sweet crunchiness we love from classic coffee cakes.

OVERNIGHT FRENCH TOAST

Simple is the word for this recipe, with lots of room for variations. I used whole wheat bread, but you can use any bread you choose, following the measurement guide. Brioche would make a wonderful choice, however during confinement cooking we use what we have. Cubing the bread makes it possible to place the bread into the loaf pan, and adds spaces for the french toast filling to soak in. After covering a chilling overnight, the bread fully absorbs the egg mixture. I cover the pan with plastic wrap and push down gently to cover the bread with the egg mixture then place in the refrigerator over night.
