As a life-time cook, I am always curious by new takes on classic recipes, in this case the Chocolate Chip Cookie. While shopping for a bike, yes a bike, I spotted this Tahini Chocolate Chip Cookies with Sel de Mer from L’Appartement 4F Bakery in NYC. Wish I could be there, alas my NYC work days are over but what’s not to love about a bakery with Croissant Cereal? What attracted to the cookies me as a chef was the inclusion of rich tahini paste to the cookies. This could be a substitute for a rich nut butter added to many cookies.
SESAME TAHINI
Anyway, I love Tahini and thought the cookies would be awesome and they are. Although I did NOT have the exact L’Appartement 4F Bakery recipe I was able to piece together what I thought could replicate their cookies. (L’Appartement 4F Bakery I would love if you would share your recipe) The well chilled cookie dough is scooped into perfect sized cookies and ready to bake.
Tahini brings a rich a nutty rich addition to the cookies. Brown & white sugar are combined in classic cookie goodness. Chocolate chunks and Salt de Mer with it’s a mineral-rich from the sea flavor, adds to create the perfect balance of sweet & salty. Serve with a dollop of Crème fraîche or whipped cream.
