Bijouxs Bits: Provencal Tomato Cocktail

Bijouxs Bits takes you to Provence for a summer cocktail, this little jewel is layered with vibrant fresh flavors, a tall, cool drink for a hot summer day.

This simply beautiful, classic cocktail has been a staple in the Bijouxs kitchen for years, right out of the classic Pierre Deux’s French Country; everyone will always be obsessed with Provence. (More to come from Bijouxs about classic cookbooks)

The Provencal Tomato Cocktail is made by simply muddling a few sliced lemons and a bunch of fresh mint in a large glass pitcher, pour in a large bottle of the best tomato juice you can find, or make your own if you are so inclined, and allow to macerate in the refrigerator for a few hours or more and serve.

Serve straight up, or over ice. On hot days, an entire pitcher of this refreshing juice has been known to disappear from the refrigerator, long before the 3 hours has passed waiting for the flavors to develop. Of course this refreshing tomato cocktail is also very tasty spiked with a little gin or vodka as an apéritif during cocktail hour.
