SIMPLE SOUP
These days I am keeping it real in the Bijouxs kitchen. Cooking simple food, beautifully served to keep spirits lifted. The simple joy of savoring a warm bowl Spinach & Basil Soup is a wintery little jewel.This soup is very reminiscent of my Broccoli Rabe Soup, the one with the spooky but real arrival on a ghost train into Florence years ago. I never would have found the soup without the scary trip and not had the story to tell.
GREEN IS GOOD
Rich verdant green color with fresh herb notes, this soup is a simple beauty you can serve any day of the week. I have been making a similar soup but sans the basil and love this super green herb addition. This soup is inspired from soups in the north of Italy. Best of all the soup only takes about 15 minutes start to finish. Add some toasted rustic bread rubbed with a sliced clove of garlic and a glass of red wine, you are in Italy. Stay well everyone.
