SUMMER PEACHES
Who can resist summer peaches? Luxurious, juicy peaches are a joy to eat in hand.
But baking peaches with brown butter and brown sugar creates a simple and guest-worthy dessert in 3 easy steps.
Peaches are categorized by the relationship between the fruit’s flesh and pit or stone. The difference between freestone peaches and clingstone peaches is how much the fruit’s flesh clings to the pit. Freestone peaches, as the name implies, have fruit that easily pulls away from the pit, while clingstone peach flesh stubbornly clings to the fruit. Most peaches you purchase in the market are freestone, however you may encounter clingstones and not be aware of it until you slice the peaches. In this case, I have gently pried the pit out of the peach halves, you may not have a smooth surface where the pit resided. That’s ok, not worries.
BROWN BUTTER & SUGAR BAKED PEACHES
Here’s the 1-2-3. First select ripe peaches, either white or yellow. Slice peaches in half, top to bottom, removing the pit. Place the peaches cut side up in baking pan.
Second, make the brown butter and sugar sauce.
Third, bake the peaches in a 400 degree over for about 15 minutes. Remove and serve warm with crème fraîche or vanilla ice cream.
