I am pleased to be a chosen chef to work with OXO as they partner with Cookies for Kids’ Cancer, who are providing the recipe and the tools to create Dorie’s Swedish Visiting Bars, from baker and author, Dorie Greenspan. Baking for a cause, always a little jewel.

SWEDISH VISITING BARS

Dorie describes this recipe as ”a mash-up of two recipes I love: almond-meringue topping, which I usually use on on fruit tarts and (a variation of the) Swedish Visiting Cake, which is usually unadorned. I can no longer remember when or why I married these two, but once I did, the knot was tied for life —the crisp almonds and chewy cake make a perfect couple.” Indeed.

I have seen this recipe and longed to make it–perfect timing OXO provided all I needed to bake with confidence. The recipe is EASY, mix all by hand, both the cake and the topping. These bars are not too sweet-perfect to take along when you go visiting, or just for snacking at home. They do travel well, so let’s bake some bars so you can go visiting.

OXO TOOLS OF THE TRADE

Nothing fancy is required for this recipe, but a few upgrades to the kitchen equipment can make a difference. I was a provided an OXO 9” Non-Stick Pro Cake Pan, 5 lb Food Scale with Pull Out Display, an 11” Balloon Whisk, and a Non-Stick Cooking & Baking Rack.

I really needed an upgrade on my scale, baking ingredients are best when weighed for accuracy. I first measured the flour as I normally would, wow it was off. The scale measured the flour to the exact 136 grams-easy. The balloon whisk has a soft grip handle, that is what the design the company OXO is known for,  as I learned of the company in design school.

DORIE’S VISTING BARS RECIPE

This recipe really is an easy two-bowl mix-to-bake. The batter is placed in a buttered and lined pan, topped with the simple egg-white almond sugar topping, which bakes to a wonderful sweet crackly crunch. Cool, cut into squares and dust with powdered sugar if you desire. That’s it.
