Posole Verde

This Posole Verde is an easy, slow cooker method stew that is finished with a bright green cilantro stock and topped with lots of crisp garnishes.

Cook’s Notes:

This recipe calls for whole, dried hominy (corn). You may substitute 1 14-ounce can of hominy, and omit the extra water, however the results will vary using the canned product.

I like to use fresh salsa verde, often found in international markets, but canned is fine for the recipe.

For a vegetarian version, omit chicken and use vegetable broth. Add 1 can drained pinto beans when you add stock-cilantro mixture and heat through.

Both the headnote and “Cook’s Notes” will be included in the pop-up printable recipe card feature, a functional tool you can use directly from your mobile device or tablet while shopping at the market or cooking at home in the kitchen.

Thank you to all of you have read and followed Bijouxs during the past two years, thanks for hanging in there! Like any branding process, Bijouxs has been continously evolving. It is my goal to continue to direct the Bijouxs website as a home for a carefully curated recipe collection, focusing on everday beautiful imagery all around us, right here in our kitchens.

I look foward to 2013! Best to you all!
