GIANT BEANS WITH TOMATOES AND HERBS | Bijouxs Little Jewels

Grab a little wintery comfort with a bowl of GIANT BEANS WITH TOMATOES AND HERBS a simple oven bake bursting with flavor-no boring beans here.
From my Collection Membership to you.

GIGANTE BEANS

Beans pictured here are giant lima beans, which are easy to procure online. The orginal recipe from Andrea Gentl uses a bean called “fasolia gigantes,” which are large white beans used in Greek cuisine, many times in the dish referred to as ‘Gigantes plaki’, which is very similar to this recipe. The Greek beans are available online. This dish is often served as a main course and best of all it is vegan-friendly. *One thing to note is that the beans need to be soaked overnight in lots of fresh water prior to cooking. Do not be tempted to peel off the skins, this will cause the beans to split and become mushy.

TOMATOES AND HERBS

The prepped beans* are baked in an herb-based fresh tomato sauce with oregano, thyme, bay leaf and fresh rosemary. Bake them in a 350° large covered casserole until tender for 2-3 hours, adding extra water as needed. My beans took the full 3 hours and required extra water, but time will depend on the size of your beans.

GREEK COOKING

This particular recipe originates from a port town on Serifos, although this bean dish is served in many part of Greece. It appears as the term “plaki” pronounced Plah-KEE, refers to a Greek cooking method where the food is baked or roasted with plenty of tomatoes, veggies, and extra virgin olive oil, just as these beans are prepared.

HEALTHY DINNER

This bean dish is healthy, tasty and very satisfying. Serve with lots of extra Greek olive oil and a dense bread with a crisp crust, perfect to mop up the sauces. Simply Beautiful Food from Greece for the home kitchen.

LA Hippie Nachos

LA Hippie Nachos| Bijouxs Little Jewels

These nachos are special, they are LA Hippie Nachos. Lots of little nudges make regular nachos special, Hippie Nachos No 619 from Bijouxs Little Jewels Collection.

HIPPIE NACHOS

So, what are Hippie Nachos you say? I came across this recipe online here, and had to make them. They really are such a step-up from standard nachos, yet remain true to the classic.

THE RECIPE

Who does not love nachos?? I have made them many ways over the years but discovered Hippie Nachos a recipe from artist Louesa Robuck. I met Louesa right after I moved to Ventura, a chance encounter and a friend and I went out to view her Monotype paintings in her studio. That was how the connection began. Her beautiful book Foraged Flora had just come out and she gifted me a copy! So, over the years I have attended her work shops Punk Ikebana, it was great. She truly is a talent.

ALL ABOUT THE BEANS

I think the key to this recipe is the amping-up of seasoning of the refried beans that make these nachos so special. Do not skip this step in the recipe. It’s an easy fix and really makes a difference. Once you prepare the beans you can assemble the nachos and broil to cheesy brown delights. The Have’a Corn Chips are also special, available in many markets.

Santa Fe Salad

Santa Fe Salad | Bijouxs Little Jewels

Today I am recreating a favorite restaurant salad–Cheesecake Factory Santa Fe Salad another Little Jewel from the Kitchen.

CHEESECAKE FACTORY

Beginning in Beverly Hills in 1978 (wow) starting with just cheesecake then expanding to a full menu, the restaurant chain has thrived over the years. Of course the cheesecake is great, however one of their salads has remained a favorite-the Santa Fe Salad. Although the menu is a throw back to the 80’s, the food is still great.

SANTA FE SALAD MEMORIES

It may seem a bit dated, but this salad has a taste combination that remains flavor relevant. Fond memories of getting lunch with my bestie at my home in Pasadena. Sadly she has passed, but enjoying the salad reminds me of her. The core ingredients of the salad are simple, roasted chicken if desired, grilled fresh corn, black beans, tortilla strips and Romaine lettuce, but the dressing(s) are the KEY. Tossed with a Spicy Peanut-Cilantro Vinaigrette which is so yummy I like spike it flavor up with the addition of a side of their Peanut Sauce which I always order.

SANTA FE SALAD AT HOME

Now that the Cheesecake Factory is just not down the street, I took a try at making the salad myself, knowing the salad dressings would be the key. Yes there are a few components to the salad, however you can make the dressings ahead and store in the refrigerator. Of course, I searched around the internet and found a few versions of the salad recipe. Guess I’m not the only one who craves this salad. I came pretty close with my sleuthing and tinkering to try to get the flavors correct. The peanut sauce is not exact yet, but close. I serve the salad without the chicken, which is how I order it.

Food memories are always a Little Jewel.

Friday Night Black Beans

Friday Night Black Beans |Bijouxs Little Jewels

The best recipe to pack for wonderful weekend getaways or lounging at home–Friday Night Beans are truly a Little Jewel from the Kitchen.

WEEKEND KITCHEN

Spring is almost here and boy, I can’t wait to get out and pack up for a weekend jaunt. These beans are part of my Mason Jar Cuisine along with my Mason Jar Blueberry Muffins. We don’t usually go far but a picnic at our local beach is just fine. It’s an easy formula; Mason Jars filled with salad, black beans, cornsticks (or cornbread) and cool things to drink.

Here’s how. During the week prepare some of your favorite picnic foods, mine include a jar my no-egg Caesar Dressing for salad or dip; a jar of black beans cooked with a hamhock (Cajun style); and Mason Jar Blueberry Muffins.  The beans are super-quick using the Instant Pot. The night before prepare the beans and bake the blueberry muffins and while the oven is hot bake the cornsticks. The morning is easy, just pack and go enjoy the weekend.

BLACK BEANS

There is no waste with cooking these recipes. The extra black beans make tasty lunch quesadillas or bowls served with rice  and the muffins are great for the lunch box. I like use glass jars, yes, they are heavy but are so much more sane for the environment and our health. I love these French Canning Jars with the snap lids, and they come in many sizes. Bring along an insulated tote to keep things warm, along with a large thermous filled with your favorite beverage.

Let’s go for a picnic with Bijouxs Little Jewels from the Kitchen.
