Today I am recreating a favorite restaurant salad–Cheesecake Factory Santa Fe Salad another Little Jewel from the Kitchen.

CHEESECAKE FACTORY

Beginning in Beverly Hills in 1978 (wow) starting with just cheesecake then expanding to a full menu, the restaurant chain has thrived over the years. Of course the cheesecake is great, however one of their salads has remained a favorite-the Santa Fe Salad. Although the menu is a throw back to the 80’s, the food is still great.

SANTA FE SALAD MEMORIES

It may seem a bit dated, but this salad has a taste combination that remains flavor relevant. Fond memories of getting lunch with my bestie at my home in Pasadena. Sadly she has passed, but enjoying the salad reminds me of her. The core ingredients of the salad are simple, roasted chicken if desired, grilled fresh corn, black beans, tortilla strips and Romaine lettuce, but the dressing(s) are the KEY. Tossed with a Spicy Peanut-Cilantro Vinaigrette which is so yummy I like spike it flavor up with the addition of a side of their Peanut Sauce which I always order.

SANTA FE SALAD AT HOME

Now that the Cheesecake Factory is just not down the street, I took a try at making the salad myself, knowing the salad dressings would be the key. Yes there are a few components to the salad, however you can make the dressings ahead and store in the refrigerator. Of course, I searched around the internet and found a few versions of the salad recipe. Guess I’m not the only one who craves this salad. I came pretty close with my sleuthing and tinkering to try to get the flavors correct. The peanut sauce is not exact yet, but close. I serve the salad without the chicken, which is how I order it.

The best recipe to pack for wonderful weekend getaways or lounging at home–Friday Night Beans are truly a Little Jewel from the Kitchen.

WEEKEND KITCHEN

Spring is almost here and boy, I can’t wait to get out and pack up for a weekend jaunt. These beans are part of my Mason Jar Cuisine along with my Mason Jar Blueberry Muffins. We don’t usually go far but a picnic at our local beach is just fine. It’s an easy formula; Mason Jars filled with salad, black beans, cornsticks (or cornbread) and cool things to drink.

Here’s how. During the week prepare some of your favorite picnic foods, mine include a jar my no-egg Caesar Dressing for salad or dip; a jar of black beans cooked with a hamhock (Cajun style); and Mason Jar Blueberry Muffins.  The beans are super-quick using the Instant Pot. The night before prepare the beans and bake the blueberry muffins and while the oven is hot bake the cornsticks. The morning is easy, just pack and go enjoy the weekend.

BLACK BEANS

There is no waste with cooking these recipes. The extra black beans make tasty lunch quesadillas or bowls served with rice  and the muffins are great for the lunch box. I like use glass jars, yes, they are heavy but are so much more sane for the environment and our health. I love these French Canning Jars with the snap lids, and they come in many sizes. Bring along an insulated tote to keep things warm, along with a large thermous filled with your favorite beverage.

Creamy White Bean Soup

Flexibility is word for this recipe. Italian White Beans are the flexible Bijouxs Basics recipe which begin this soup. Start with one batch of Italian White Beans = Creamy White Bean Soup. Brilliant.

WHITE BEAN SOUP

Creamy White Bean soup is really just all about a puree of Italian White Beans with most of the beans, then adding in some still-whole beans. The soup is thick and creamy. Feel free to add extra vegetable broth if a thinner consistency is desired. Garnish with Parmesan cheese and Italian parsley.

COMFORT SOUP

Garlic White Beans with Spicy Black Olive Vinaigrette | Bijouxs Little Jewels

These beans are so much more than just a bowl of beans, they create and contribute to a great number of dishes and are a great new Little Jewel from the Recipe Membership Collection.

SIMPLE ITALIAN FOOD

These beans come together in a flash and are a favorite that I have adapted from Canal House PRONTO! 2013. To keep things simple, use canned beans drained and rinsed. Place the beans in a bowl then start mixing in the other ingredients. With so few ingredients in the recipe using the highest quality ingredients does really make a difference. As you can guess, a really good olive oil is a must! Novello extra-virgin olive oil was my choice as it is in season. I usually find some at Trader Joe’s but only in January, as this olive oil is an early harvest. Fruity green olives and green grass overtones, yum!

TOAST WITH BEANS & SAGE
