I was obsessed with this soup from the very first taste, Spicy Thai Carrot Soup. Sweet carrots pureed with a touch of warming spices and made smooth with creamy coconut. I picked it up every week from Whole Foods Market, then the soup went away; I was so bummed. My relentless search led me to a version of the Spicy Thai Carrot soup I have enjoyed, a little jewel found.
SPICY THAI CARROT SOUP STORY
I began a relentless search for the soup recipe once it disappeared from the store deli. Has this ever happened to you? I began at the source Whole Foods Market website, no luck. I ran into a dead end and I moved on to other recipe obsessions…the search engines were not as robust back then, no recipe popped up.
Years later, and quite by chance, I remembered the soup. A friend had brought it to me when I was under the weather a while back, oh the healing power of soup. I had no idea what was in the soup, I could not find a listing on Whole Foods website. However now my recipe search turned up some leads. It turns out others had missed soup soup as well. I found a recipe for a Paleo Thai Carrot Soup, ala Whole Foods. Worth a try. It was made via the Instant Pot, so only about 10 minutes to soup, even better. Here we go.
My thanks to a fellow food blogger for posting a knock-off of this Whole Foods soup. It seems others were yearning for the soup as well. While not exactly as the original, it is close. I made a few changes based on my memory. I included a bit more ginger, that was prominent in the original, a little more curry, some fish sauce and lots more cilantro (I do love it).
I think I got pretty close to the original, this is a delicious soup. I topped it with crunchy hemp hearts and of course a few cilantro leaves. A warming soup, with just kick from the pepper and ginger, good for what ails you in the unsettled Spring weather. Please enjoy and if anybody has the original recipe send it on or maybe Whole Foods can bring back the soup.
