Stop and pick up some end of season tomatoes, they are lush and warm from the late summer sun. Today I found this luscious tomato at the local Farmers market, who could resist?
FRESH PARSLEY VINAIGRETTE
Just a few ingredients are need to create this fresh parsley vinaigrette. Beautiful on sliced ripe tomatoes, or tossed with salad greens or even pasta- a versatile Little Jewel.
The current heat wave over most of the country call for cool refreshing dishes. This tomato salad is one I have on repeat.
