Humble, that’s what this simple Cherry Plum Polenta Cake is all about, a little jewel for these low-key days.
This little jewel occurred as I wandered around the house, cleaning out cupboards and the pantry. Really I was looking for food I could use that I had socked away for just such a time confined at home. Turns out my pantry survey yielded some finds such a bag of cornmeal, but I knew I wanted more than just cornbread.
CHERRY PLUMS
To create the cake all there is to do is hand-mix the dry ingredients and spices followed by the addition of the wet ingredients, simple. The batter was added to my trusty 9-inch cast iron skillet, enforcing the humbleness of this recipe. A little sprinkle of coarse sugar and off to the oven to bake.
PLUM POLENTA CAKE
What emerged was a soft corn cake dotted with sugar-coated plums peeking through. I topped the slices with French style vanilla yogurt, it was very good. Turns out those simple products are still little jewels for today.
