Country Comfort in a truck that’s going back home. Simply home-style–Lemon Chicken & Herb Skillet Pot Pie a little jewel from the kitchen.
This year like the last, we are all still hanging close to home. Lots of people are heading back home to visit loved ones and all the comforts that the word “home” evoke. I plan on trip later this month to visit home and seeing friends I have missed. I can’t think of anything more comforting than Chicken Pot Pie. This skillet version uses a base from my Greek Lemon Chicken. The filling for the pie is cooked on the stovetop in a cast-iron skillet then topped with pie crust and baked in the oven until golden brown. Comfort.
LEMON CHICKEN & HERB SKILLET POT PIE
This pot pie truly is a pie, thin and sliced into serving wedges. A change from the deeper pot pies, the filling is denser and will hold together for slicing. Large chunks of chicken, green peas and classic Herbes de Provence season the filling. Chicken gravy would be a nice addition. I usually serve this with a simple green salad, keeping it a simple taste of home.
