Eat a peach. Bite into a juicy, ripe peach and you know it’s summer. Staying close to the farm-to-table mantra, Pure Peach Sorbet is a sweet little kitchen jewel for summer.
This peach sorbet is staggeringly simple, but then sometimes the best things are really just that simple. Fresh, very ripe peaches are cut, with a squeeze of lemon, a touch of sweetener and frozen for a few hours. Place the fruit, along with the frozen juices in a food processor and blend until smooth – pure peach sorbet.
Choose to make the sorbet using unpeeled or peeled peaches. Here I used unpeeled white peaches to enjoy the lovely pink- flecked color of the sorbet. Serve with a crisp sugar cookie and since I was truly keeping it simple, I used old-fashioned Biscos sugar wafers.

I do the very same thing Greg- but (many) times I overbuy and have tons of super ripe peaches, so I make this sorbet – just another way to eat a peach!
