Wok cooking is my favorite for quick, healthy meals – one-pan wonders that cook up in less time than it takes to prep the ingredients. This is a very simple stir-fry, a combination using just three main ingredients. Tofu, brocolini, and snap peas are served in a spicy sauce made with on-hand pantry ingredients. Easy.
My wok is a treasured cooking tool. It has prepared hundreds of meals, its weighty frame maintains the heat, a very hot wok or skillet is key when stir-frying. Because cooking happens so quickly, having all the ingredients ready to go, i.e. mise en place, is paramount before you fire up the wok. A large, heavy gauge skillet can stand-in for a wok.
If you have not cooked with tofu before, this stir-fry is a great introduction. The airy tofu cubes just love the spicy sauce. I use broccolini, with smaller florets and longer thin stalks, that cook very quickly. In the mix are crispy snap peas for a sweet little crunch. The sauce gets a kick from garlic chili paste, a Bijouxs Basics refrigerator pantry staple, used to spice up everything from eggs, to soups and grilled meats.
Serve this spicy stir-fry classic with steamed rice, or toss some pre-soaked rice noodles into the wok at the end of cooking, for a substantial spiced noodle meal.

Me and my ‘fancy’ kitchen and not a wok in sight! I have a wok ring but no wok. That’s just wrong. I think it’s the fact that they take up so much room. Not that I have a small kitchen! Must remedy. GREG
