It’s citrus season here in Southern California and lemons brighten the way. Here’s a little jewel recipe that preserves the lovely lemon season and introduces a savory way to use yogurt cheese..  Please enjoy Yogurt with Herbs & Preserved Lemon, savor the season.

PRESERVED LEMONS

Meyer lemons line the trees in my central coast neighborhood. So many have been shared with me by my generous neighbors. With this bounty, I have been in the kitchen with all things citrus. 

First up, I put up a jar of Preserved Lemons. Simpler than you think. I have been making Paula Wolfort’s quick method for years. These take a few weeks to cure, but you can purchase preserved lemons in markets and at most Trader Joes.  In this jar I added a few dried herbs and spices I saw in this cookbook, they are perfect to use in my Chicken Tagine with Green Olives and Preserved Lemon.

YOGURT CHEESE (LABNEH)

Last week I posted recipe No. 358 Roasted Strawberries with Labneh going with the sweet side of yogurt cheese. which includes a method to prepare strained yogurt cheese.

This week I introduce a savory take using yogurt cheese (Labneh). Favorite fresh herbs, garlic, and preserved lemon rind whipped into a flavorful paste, then mixed into the yogurt. A few roasted shishito peppers are part of the herb mixture, so make sure to use only the mild peppers. I labeled the dip the by garnishing with a few of charred peppers to let guests know there was a bit of heat in the dip. This dip is light and fresh. Great with crackers, pita or veggies. It also makes a tangy sandwich spread or topping for scrambled eggs.
