Roasted Lemon Chicken | Bijouxs Little Jewels

One of my favorite John Irving quotes–“cooking can keep a person who tries sane.” Roasted Lemon Chicken can help you keep your cool on a rushed weeknight or during a lazy weekend – either way this recipe is a Little Jewel.

Why cooking is important has been a long time subject here on the Bijouxs blog. I really do believe that learning to cook, cooking at home, and savoring a meal in the comfort of your own home has many advantages. Yes, a reason to cook.

DINNER AT HOME

I believe in the reflective, calming and meditative practice that cooking can bring to life. Simple daily acts such as the chopping and the preparation of our foods can provide an opportunity for relaxation and greater enjoyment in the kitchen. Seasonal fresh ingredients and presentation, all contribute to the experience. If we dine solo, a table for one, there are no surprises—no demanding conversation at dinner—just you, the meal and your thoughts. Solitude is important. The digital distractions can drive our attention away from the pleasures of the dining at home.

COOKED SERIES

Micheal Pollen’s series “Cooked” speaks to the vital importance of food and cooking in our life. Pollan, is also the author of “The Omnivore’s Dilemma”, and he has a request, “Can we please get back in the kitchen?” In an interview with CNN Pollan said is clearly, “When we learned to cook is when we became truly human.” Like Pollan, I enjoy putting a meal on the table. I know when I stopped cooking, that’s when things went off track. Pollan also makes the point  that “’French cooking is really the result of peasants figuring out how to extract flavor from pedestrian ingredients.” So most of the food that we think of as elite didn’t start out that way.” French food becomes less intimidating when viewed in context. In closing he states that “Cooking is really fun and interesting and all that flows from it is at the core of who we are.” That feels right.

Believing in the importance of cooking at home, my intention has been to create a food website that delivers recipes, pantry items, kitchen products and vendors with enduring qualities and exquisite craftsmanship. The story and theme are a natural evolution of my working talents: food, design and fashion = the Bijouxs. I share what I have learned. Bijouxs is about a style evolved.

RECIPE: LEMON ROASTED CHICKEN

The first time I had a version of this chicken was at the Zuni Cafe, way back in the 80’s. Zuni Roast Chicken with Arugula Salad, still prevails, with recipes and many versions by famous chefs. The cookbook. Zuni Cafe Cookbook, contains the original recipe, as well as a charming collection of Zuni Cafe recipes.

I make two version of this house favorite dish:  One Is the quick weekend version using store bought roasted chicken and use what ever croutons I find in the freezer of cupboard (pictured). The second is a relaxing weekend version, where I roast the whole chicken, and make use of the oven to make a batch of delicious home made croutons. Both are equally pleasing.

Lemon Roasted Chicken is a little gem to add to your collection.

  1. This chicken with bread salad has ALWAYS been a favorite – just blew me away the first time I ate it at Zuni (yes, years ago) and has inspired so much of my chicken roasting!
