Master’s Applesauce

Applesauce, a recipe that perfectly highlights the fresh sweet nature of the fruit. Here is the Bijouxs Master’s recipe, a little pure apple love.

It’s apple time again in the Bijouxs garden. This year, the diminutive “Anna” tree is bursting with fruit, and although I have but one apple tree in my garden, there will be a harvest of 100+ apples, “Anna” is truly little gem of a tree.

Applesauce is a simple, humble recipe that I feel best captures the true fresh sweetness of an apple, outside of course of just biting into a fresh, crisp apple. At all of my homes I have always planted an apple tree, so vats of applesauce have been prepared over the years, resulting in what I call my Master’s Applesauce recipe, a Bijouxs Basics, which reflects refinements to this simple recipe.

The first aspect of this recipe, which I myself still find odd, is that of using a microwave to cook the sauce. The microwave is tucked away in a forgotten corner of the kitchen, I rarely use it for more than warming or for Greek Lemon Soup, rare that I use it for cooking an entire recipe. I still harbor that lingering early distrust of microwaves and stand back far away when it is turned on. But, the microwave performs quite nicely for applesauce and seems to preserve a particular essence of freshness to the apples that seems to get lost when cooking on the stovetop.

Other small refinements include; using bottled neutral spring water (I favor Fiji); a bit of the red apple peel to impart a slight pink hue to the sauce; and the addition of honey at the very end to finely tune the sweetness of the sauce. Be sure to see the COOK’S NOTES located on the recipe card.

Applesauce has long been a family favorite, being one of the first things I still crave when feeling a bit under the weather. As a child I loved receiving a special delivery bowl of applesauce, often served in my Mother’s footed Fostoria glassware, photographed above as a simply masterful bowl of comfort.

I love apples and find Anna apples to be such glorious subjects in front of the camera, capturing their blushing little faces bursting with old-fashioned grainy beauty.
