Ojai Pixie season is upon us, but only until mid-May. Now is our last chance to preserve nature’s bounty by making making this quick Ojai Pixie Marmalade-a Little Jewel for the future.
OJAI PIXIE SEASON
Well it’s no secret I adore homemade jams, and the simpler the better. With a few pounds of Ojai Pixies still in the larder, I made a quick batch of marmalade in the Instant Pot. As I have stated, I was “late to the party” but have come to revere the Instant Pot for certain cooking tasks.
Marmalade can be a rather slow go on the stove, but with the Instant Pot it takes only about 10 minutes of actual cooking time. The prep is super easy, just place the ingredients in the Instant Pot, set cook time and in about about 30 minutes total time you have marmalade. I used this method to prepare my friend’s Mum Ivy’s recipe for tradtional Scottish Marmalade. Ivy was a real hoot and shared her simple method for marmalade on one of her visits to the US long ago.
INSTANT POT MARMALDE
Marmalade with Ojai Pixie Tangerines is equally as simple. Do count on some time after the initial cooking to use the Sauté setting and reduce the marmalade to the perfectly-thick consistency. I like my marmalade a bit chunky, but you can slice the tangerines into smaller pieces prior to cooking if a smoother consistency is desired.
