Fruits and the end of summer. Wow, I can’t believe summer is almost over. Peach, Tomato & Feta Salad is an impromptu recipe made with my end of season garden vegetables, a friend’s luxe peach and some on-hand salty feta, a little jewel from summer.
END OF SUMMER FRUITS
My tomatoes are running their course, not much of a season. I live in the Central Coast area now and I planted a bit too late, but I have a few rag-tag tomatoes. In this era of at home, a friend shared an extra large ripe peach, this I knew would become a salad.
It may seem like a strange combination, tomatoes & peaches, however these two fruits pair nicely; the salty edge of the tomato and the sweet creamy texture of the peach. This salad is very similar one of my summer favorites, Heirloom Tomato, Watermelon & Chèvre Salad. I had some good salty feta, and this addition was perfect. I dressed the salad with a simple lemon juice and olive oil dressing, with a few snips of chives from my herb garden.
CONFINEMENT COOKING
Doing all the cooking at home is really challenging me to use whatever I may have at the time. I am no longer able to run out to pick up recipe ingredients but instead the ingredients now drive the recipe. Using every fresh ingredient in the moment is important, not to waste a thing. I am sure lots of you are also experimenting with new recipes.
I am grateful to have food, shelter and a hope of a bright future once again.
