Spaghetti Forte

A simple solution to summer’s heat in the Bijouxs kitchen is to serve a spicy spaghetti that goes together in a flash – a light bite to serve along with a tall, cold drink. Spaghetti Forte, a strong contender in the summer kitchen from the little jewel collection.

Our family adores olives. Consequently, you most certainly will find an ample assortment of olives in the pantry ranging from tiny Nicoise from France, stars of our 15-Minute Pizza Dough; or bright green Castelvetrano from Italy, key players in Chicken Tagine with Green Olives & Preserved Lemon; and oil- preserved Kalamata from Greece, lending richness to comforting Fettuccine with Tuna, Olives and Capers. However, despite all the olive love, a variety of olives typically reside in their half-opened jars in the fridge.

Spaghetti Forte yields to a craving for pasta, the love of olives and makes use of whatever is on hand (in this case leftover olives), cooking with grace and economy is always a little jewel. This spaghetti is just the sort of simple, rustic cuisine I favor during the summer months, easy to prepare and to enjoy. Lightly adapted from a long-time favorite cookbook, Cucina Rustica by by Viana La Place and Evan Kleiman.

Spicy food is a culinary tradition in hot, arid countries and this summer in LA has been no stranger to the heat. What to do about dinner remains an ongoing question. Spaghetti Forte is just as the name suggests, a strong pasta. Simple, with very direct flavors from olives, capers, garlic and anchovy that coat strands of thin spaghetti, further dazzled with little jewels of red pepper flakes – a plate of intense flavor to counter the hot, summer heat.

Spaghetti Forte goes together in a flash, which is a blessing during the long days of summer, especially when you are craving a hot meal and a break from the incessant salads days. Use any combination of imported olives, I just use whatever happens to be on hand. Almost all the ingredients are pantry staples, so no matter what a strong, flavorful meal is minutes away. Enjoy this bold spaghetti with a very tall, cold drink.
