Here is another confinement cooking creation from the Bijouxs Little Jewels Kitchen. My on-hand vegetables created a keeping it simple Raw Pad Thai Salad, health is always a Little Jewel.
RAW PAD THAI SALAD
This confinement has created plenty of time to get into projects long abandoned and some time to finally sit down a go through my new cookbooks. Eating fresh and light just makes sense, especially since I have not gotten to yoga class for the past 6 months. Getting out to shop for specific recipe ingredients is no longer a luxury I can afford, so many times I scour the kitchen and cookbooks for ideas.
ONE GUN RANCH MALIBU COOKBOOK
One new cookbook I have enjoyed is from the Biodynamic One Gun Ranch in Malibu. The unusual name come from the ranch’s previous owner Guns N’ Roses drummer Matt Sorum. Now a Demeter Certified Biodynamic farm in Malibu, California, brought to life by the current owners.
I spotted this recipe in the cookbook, and lightly adapted it by swapping out some of the ingredients based on what I had on hand. I think you can do the same, using on-hand raw vegetables such as cabbage, bean sprouts, and chiles which the original recipe included, or perhaps thinly sliced cucumber for the zucchini.
OXO CHEF’S MANDOLINE
I used my favorite chef’s mandoline from OXO I used here to slice all the vegetables super thin to stand in place of noodles, adding peppery arugula as the salad base. Adapt salad per your personal taste. The dressing is a play on the classic thai peanut-based dressing, instead using almond butter, Bragg Aminos and lots of fresh ginger and garlic.
I began studying about biodynamic food production when researching wine pairings for a new client. It truly opened up an area of food that I am excited to learn more about: closed loop farming, keeping everything on the farm in the farm, no waste and healthy food practices. Biodynamic is considered “beyond organic.”
