Hello, yes I am still here, like everyone else at home, hunkering in my house. The days all meld together, it’s groundhog’s day everyday. I picked up some Japanese sweet potatoes for Thanksgiving but did not get to them, so when in doubt, bake potatoes.
JAPANESE SWEET POTATOES
I have made many a meal from a simple baked potato. Having my fill of traditional holiday flavors for now, I wanted spice. I have made my own harissa paste, recipe here, and found it to be a valuable staple in the hot sauce collection. I love Spicy Moroccan Mussels, alas fresh seafood shopping is not available these days.Â
Japanese Sweet Potatoes have purple-red color skin, round with tapered ends. The creamy potato flesh turns yellow after cooking. They are great baked and filled with your favorite toppings, or sliced in wedges and baked into crispy fried potatoes. In this recipe the sweetness of the potato plays off the vibrant red spicy-sweet sauce.Â
I balance things out with a big fresh salad and fruit for dessert. The potato makes the meal. This is the at home simplicity to enjoy, and the everyday beauty all around us, right here in our kitchens. Stay safe and well.
