Whenever I can’t decide what to cook or run short on time (often), I revert to one of my favorite meals to serve – an antipasti-style lunch, preferably al fresco. For simple, everyday beauty at its best, I like to serve an abundance of small plates and platters. Some items are picked up from the local Italian market, but centered by a platter of warm, creamy Stuffed Tomatoes with Basil Sauce.
Tomatoes, filled with creamy goat cheese are baked until puffed and brown, served with a verdant green basil sauce. Vine-ripened market tomatoes will do until the garden kicks in, and since it is planting season, consider Basil Verde Piccole variety, the intense green leaves are perfect for pesto.
These little stuffed tomato jewels can be served warm or at room temperature, so no need to rush.
