Quick Miso-Glazed Salmon

Even when it’s a Table for One night at home, be sure enjoy a delicious, healthy dinner. This flavor-packed salmon goes together quickly with pantry basics and makes two portions, just enough for tomorrow’s lunch.

Whether you find yourself dining at a Table for One, once a week, once a month or most nights, preparing fresh, healthy meals is important.  This quote from Louse Hay, “Be gentle with yourself. Be kind to yourself. Treat yourself as you would someone you really loved,” of course speaks to me as a cook.

Feeding ourselves with care is an important part of staying healthy. So many times it seems to easier to grab something, but by creating a collection of what I call Table for One recipes at your avail, you know you have options to grabbing meals to go.

Quick Miso-Glazed Salmon is one of my favorite Table for One recipes. I like to pick up beautiful, fresh salmon on sale, a 6-8 ounce piece will serve one, with leftovers for a salad the next day.

The savory miso marinade goes together quickly and after 30 minutes (time to prep the rest of the meal and relax) you are ready to broil the salmon–just delicious. I also pick up a bunch of fresh spinach; I use half to sauté with a little garlic and olive oil to go along with the salmon, then use the rest for a salmon Salad Niçoise the next day (add an hardboiled egg, green beans, olives and balsamic vinaigrette).
