Truth be told-I am not a great fan of a slaw salad of stiff cabbage dressed with mayonnaise, etc. that’s most slaws you encounter. I offer a softer slaw-crispy sugar snap peas with sweet bites of dates all bathed in a creamy goat cheese vinaigrette – Shaved Snap Pea Slaw with Goat Cheese from Little Jewels from the Kitchen.
SNAP PEA SLAW
Prepping the snap peas is the first step. The peas are cut into thin lengthwise pieces then plunged quickly into boiling water and quickly remove to a bowl of ice water to halt the cooking and retain bright green color. Drain and pat dry.
Whisk the dressing ingredients in a large bowl until well blended. Add the peas, dates pistachios, mint leaves. Add extra crumbled goat cheese. Toss together then place salad on serving platter. Finish salad by garnishing with mint leaves or micro greens.
PICNIC SLAW
