Sugar Snap Peas & Endive with Creamy Romano Dressing

 

A confinement kitchen creation once again. Sugar Snap Peas & Endive with Creamy Romano Dressing-a crunchy, sweet & salty delight. Keeping it simple in the Bijouxs Little Jewels Kitchen.

Scanning the contents of my refrigerator, I found a random bag of snap peas, endive, and some micro greens. A quick search and I came across this lovely recipe via Chef Dan Kluger, of ABC Kitchen in New York. ABC Home & Carpet is a fabulous home design store, a designer’s paradise I used to frequent when in NYC. There are three eateries are in store, focusing on sustainable, fresh ingredients and slow food, along with stellar chefs at the helm. Dan Kluger is an award winning chef, and this simple and wonderful snap pea salad is one of his creations.

SNAP PEA SALAD

 I adjusted the recipe lightly and also substituted my favorite find from my trip to Florence Italy, Creamy Romano Dressing. This salad is a great balance of sweet crisp from the peas, bitter crunch from the endive, and creamy salty via the cheesy dressing. A winner on the confinement table.  It is simple to prepare the dressing ahead and blanch and slice the peas, then chill. Plate when you are ready to enjoy.
